In the Texas panhandle you'll find Caprock Canyons State Park.  Caprock is a great place for hiking and camping.  There are enough extensive trails and primitive camping to keep you away from society for a while.  It's also a great place equestrian enthusiasts and horse back riders.  Horse rental is available as well as some developed sites with individual stable for your trusty steed.  The canyons also serve as great scenery during your ride or hike.
In the park you'll also find Lake Theo.  The 120 acre lake is stocked with channel catfish, largemouth bass, sunfish and crappie, among others.  Lake Theo also has a swimming beach.  There's enough to keep even the most hardcore outdoor enthusiast busy.

14 miles allow equestrian use. 
Caprock Canyons Trailway offers 64.25 miles for hiking, backpacking, mountain biking, or equestrian use.
